What’s the freshest take on the booming plant-based protein market? Faux Fish! Pictured here is Madrid-based startup @mimicseafood Tunato. Fabricated from a specialty tomato variety grown in southern Spain, it resembles sliced sushi-grade tuna in shape and size. Investment in U.S. plant-based seafood hit $70 million in the first half of 2021, as much as in the past two years combined. Growth of plant-based protein and meat alternatives is projected to increase from $4.6 billion in 2018 to a whopping $85 billion in 2030, according to investment firm UBS.
